“I had the pleasure of working with Rachel Le and Laney Schenk (Wynn’s Assistants) for the month of my wedding. I could not have been happier with BOTH of them! Rachel did an impeccable job putting together and incredibly detailed timeline for my big day which made everything run seamlessly. Every bride I’ve ever spoken to gave me the same advice, “Something is bound to go wrong on your wedding day and you just have to laugh it off.” Honestly my day went PERFECTLY with not one slip up. I attribute everything to Rachel for keeping everything on schedule and coordinating with all my vendors so perfectly. They were both so attentive at responding to my one million emails the month of right away. Rachel and Laney are both so sweet and have such nice calming demeanor’s which is super important to be surrounded by on your wedding day and the month leading up to. I could go on and on about my amazing experience and would recommend hiring them to EVERYONE who is seeing “the perfect wedding experience!”

Love,

Katie & Roberto

Modern Spring Glam – Chic Black & White Tablescape at The University Club Atop Symphony Towers

Get inspired and jump start spring into full swing with our French Inspired Modern Spring Glam Photo shoot at The University Club Atop Symphony towers! This chic set up was inspired by an elegant mix of modern glam interior design and french inspiration similar to that of Chanel Spring 2010 Ready to Wear runway show all masterfully translated into one beautifully styled tablescape.

Our designer Wynn Austin of Wynn Austin Events teamed up with floral and event stylist Aileen Tran to create a chic, French-influenced styled shoot with Joseph Matthew Photography. They chose San Diego’s University Club overlooking San Diego Bay and executed their modern-chic vision flawlessly.

Soft feminine touches in the floral design created a striking balance for the venue’s minimalistic interior. “The University Club is very modern with clean lines, “ said Wynn Austin. “We created a table that complemented the venue, focusing on just black and white, with the softness showing in the florals.” Textured linens provided a luxurious setting for gold-rimmed stemware and black candelabra, squared vases and classic white votives. White floral arrangements set at varying heights included anemone, freesia, amaryllis, ranunculus, tulips, roses, orchids and lilies, wrapped in black satin ribbon. Immaculate lucite menus from Rachel Jane Couture were individually etched with each guest’s name. Concepts Event Design and Classic Party Rentals provided rentals and furniture, including clear acrylic chairs and silver chargers.

Crinkled, bold, feminine fabrics  characterized the entire look, which were primarily black and white, the two iconic colors of every Chanel show. Contrasted beautifully with the sleek and clear look of Lucite chairs and glassware from Classic Party Rentals.

Aileen Tran Event Stylist created the floral tablescape with a combination of black satin, crystal, and ribbon adorned boxed containers scattered down the center of a long table. Aileen incorporated a mixture of white and black florals that included ranunculas, tulips, amaryllis and anemones, which are prominently featured in the Chanel show.

In Case you need to impress your “soon-to-be” In Laws by making a turkey! Here is my favorite turkey brine!  Brining is a MUST for a moist turkey!

(Recipe from epicurious)

Turkey:

  • 1 19- to 20-pound turkey; neck, heart and gizzard reserved for gravy
  • 8 quarts water
  • 2 cups coarse salt
  • 1 cup honey
  • 2 bunches fresh thyme
  • 8 large garlic cloves, peeled
  • 2 tablespoons coarsely cracked black pepper
  • 2 lemons, halved
  • 2 tablespoons olive oil
  • 5 cups (about) canned low-salt chicken broth

Gravy:

  • Reserved turkey neck, heart and gizzard
  • 6 cups water
  • 3 1/2 cups canned low-salt chicken broth
  • 2 carrots, coarsely chopped
  • 1 onion, halved
  • 1 large celery stalk, chopped
  • 1 small bay leaf
  • 5 tablespoons butter
  • 5 tablespoons all purpose flour
  • 1/4 cup whipping cream

Preparation

For turkey:
Line extra-large stockpot with heavy large plastic bag (about 30-gallon capacity). Rinse turkey; place in plastic bag. Stir 8 quarts water, 2 cups coarse salt and 1 cup honey in large pot until salt and honey dissolve. Add 1 bunch fresh thyme, peeled garlic cloves and black pepper. Pour brine over turkey. Gather plastic bag tightly around turkey so that bird is covered with brine; seal plastic bag. Refrigerate pot with turkey in brine at least 12 hours and up to 18 hours.

Position rack in bottom third of oven and preheat to 350°F. Drain turkey well; discard brine. Pat turkey dry inside and out. Squeeze juice from lemon halves into main cavity. Add lemon rinds and remaining 1 bunch fresh thyme to main cavity. Tuck wings under turkey; tie legs together loosely to hold shape. Place turkey on rack set in large roasting pan. Rub turkey all over with 2 tablespoons olive oil.

Roast turkey 1 hour. Baste turkey with 1 cup chicken broth. Continue to roast until turkey is deep brown and thermometer inserted into thickest part of thigh registers 180°F, basting with 1 cup chicken broth every 30 minutes and covering loosely with foil if turkey is browning too quickly, about 2 1/2 hours longer. Transfer turkey to platter. Tent turkey loosely with foil and let stand 30 minutes. Pour pan juices into large glass measuring cup. Spoon off fat; reserve juices.

For gravy:
While turkey cooks, place reserved turkey neck, heart and gizzard into large saucepan. Add 6 cups water, 3 1/2 cups chicken broth, carrots, onion, celery and bay leaf. Simmer over medium heat until turkey stock is reduced to 3 cups, about 2 hours. Strain turkey stock into bowl; reserve turkey neck and giblets. Pull meat off neck. Chop neck meat and giblets.

Melt 5 tablespoons butter in heavy large saucepan over medium heat. Add 5 tablespoons all purpose flour and whisk 2 minutes. Gradually whisk in turkey stock, cream and up to 1 cup reserved turkey pan juices (juices are salty, so add according to taste). Simmer gravy until thickened to desired consistency, whisking occasionally, about 5 minutes. Add chopped turkey neck meat and giblets; season to taste with pepper.

Serve turkey with gravy.

Le Chic Wedding Boutique Has Been Launched!

Hi Everyone,

I am so happy to announce that our Le Chic Wedding Boutique has been launched! I got the idea for the boutique because whenever I work with my brides they struggled to find a lot of unique wedding accessories . Then I would direct them to so many different places. On my search to hunt for fabulous and unique wedding items, I had the opportunity to get to know so many talented designers both near and far. Then it dawned on me that I would love to make it convenient for my brides and all brides to have the opportunity to shop online with a very boutique atmosphere. The boutique consists of many designers that pride themselves on their work and have designed the products themselves. None of our products are made in a factory and in fact many of them are made by hand. We also carry products made from recycled material. Janice and I have handpicked every item for you to enjoy, and I know this is just the beginning. So bookmark the boutique and come back and visit us from time to time. We will also carry a home accessories collection! We know that you are getting ready to start your new life together so stay tuned for fabulous home decor to come.

Here are pics of a few of my favorite items!

Love Always,

Wynn
